This is a delicious, wholesome, filling, meat-free meal. It is one of my favorite meals and I hope others will enjoy it, too!

Recipe Ingredients for Vegetarian Shepherd's Pie

4 cups organic yams
1 cup organic frozen green peas
1 cup organic frozen corn
1 cup organic frozen carrots
4 cloves garlic
1/2 organic white onion
1/2 tsp organic olive oil
4 cups Meal Starters Veggie Crumbles
1/2 cup Low-sodium, Cheddar Or Colby Cheese

Recipe Directions for Vegetarian Shepherd's Pie

  1. 1. Wash, peel, and thinly slice 4 large yams.

  2. 2. Fill a large pot with water and the sliced yams. Boil the yams until they are very soft (about 30 minutes).

  3. 3. Fill a medium-sized pot with water and boil the peas, corn, and carrots until they are softened (about 15 minutes).

  4. 4. In a pan, cook the sliced onion and garlic in 1/2 cup of water and the olive oil, until they are golden brown.

  5. 5. Add in the veggie meat, plus 1/4 cup more water, so the meat will not stick to the pan.

  6. 6. Drain the boiled vegetables and stir them into the meat mixture.

  7. 7. Drain the yams very well. Then mash them.

  8. 8. Pour and spread the meat mixture into a square casserole baking dish.

  9. 9. Pour and spread the mashed yams evenly over the meat mixture.

  10. 10. Shred the cheese. Then sprinkle it evenly over the yams.

  11. 11. Place the Shepherd's Pie in the center of the oven and broil it on high until it is golden brown (5-7 minutes).

  12. 12. Turn off the oven, take out the Shepherd's Pie, and enjoy!
