Recipe Ingredients for Vegetarian Shepherd's Pie

3 large tomatoes
1 onion
2 yellow squash
2 zucchini
6 cloves garlic
4 carrots
3 stalks celery
1 red bell pepper
1 pound tofu
3 1/2 cups brown rice
1/3 cup walnuts, chopped
1/4 cup coconut
1 1/4 cup Bisquick
1 cup Egg Beaters
1 cup nonfat milk
8 ounces cheddar cheese

Recipe Directions for Vegetarian Shepherd's Pie

  1. Preheat oven to 400 degrees.

  2. Cook rice in a rice cooker.

  3. Saute chopped walnuts and coconut in a small skillet until just toasted. Add to rice when rice is done cooking.

  4. In food processor, combine tomatoes, onion, squash, zucchini, garlic, carrots, celery, and bell pepper and chop to a fine dice. You won't be able to fit everything in at once, so set ingredients aside in a large mixing bowl as you go.

  5. Saute veggie mix for about 5 minutes in a large skillet, then add ground soy, rice and nuts. Heat throughout.

  6. Pour all ingredients into a greased 9 x 13 baking dish or two smaller baking dishes. Sprinkle with cheddar cheese and set aside.

  7. In a small mixing bowl, combine Bisquick, Egg Beaters, and milk. Stir with wire whisk, then pour over the top of the veggie/soy mixture.

  8. Bake for 25-30 minutes.

  9. NOTE: Rice may easily be substituted with 3-4 medium baked (and diced) potatoes.
