Vegetarian Shepherd's Pie Recipe

Pretty basic recipe for a simple shepherd's pie (mashed potatoes, meat (fake meat, in this case!), and vegetables). I used Campbell's Healthy Request Condensed Cream of Mushroom soup, but it wouldn't let me add it for some reason.

Recipe Ingredients for Vegetarian Shepherd's Pie

2 1/4 medium potatoes, boiled, without skin, mashed
1/4 cup fat free milk
1 1/2 cup mixed vegetables
1 1/2 cup Morningstar Farms Meal Starters Grillers Recipe Crumbles
1/2 cup cream of mushroom, canned, condensed, reduced sodium
1/2 cup Reduced Fat Mild Cheddar Cheese

Recipe Directions for Vegetarian Shepherd's Pie

  1. Preheat Oven to 375 degrees.

  2. Peel potatoes, wash, and boil until tender. Mash to desired consistency. Add 1/4 c skim milk. Season as desired.

  3. Meanwhile, cook mixed vegetables in microwave. Mix with 1/2 c cream of mushroom soup, add to small pan sprayed with Pam or other non-stick spray.

  4. Microwave Crumbles on high for 1 1/2 minutes, spread on top of vegetables in pan.

  5. Spread Potatoes on top of Crumbles, sprinkle with cheese, and cook in oven for about 12 minutes, or until cheese is melted and browned as desired.
