Recipe Ingredients for vegetarian shepards pie


Topping:
1 kg potatoes
10 ml low fat milk
2 tbsp margarine
1 tsp salt
1 tsp pepper

Filling:
1 onion, finely chopped
1 red pepper, finely chopped
300 g mushrooms, finely chopped
3 garlic cloves, crushed
5 ml sunflower oil
2 carrots, chopped
140 g broccoli, chopped
45 g kidney beans
1 tsp paprika
1 tsp parsley
1 tsp oregano
1 tsp basil
3 tbsp plain flour
2 cups (Knorr) stock
2 tbsp tomato puree
1 tsp soy sauce

Recipe Directions for vegetarian shepards pie

  1. boil peeled potatoes for 20 minutes, until fork soft

  2. add milk and margarine and mash until desired texture

  3. add salt and pepper to taste

  4. boil carrots and broccoli for 15 minutes

  5. add oil to a pan

  6. sautee onion,pepper and mushrooms and garlic, add spices/dried herbs, and flour

  7. add broccoli,carrots and kidney beasn to pan

  8. stir in vegetable stock and tomato puree and soy sauce

  9. place filling ina large dish, cover with mash. grill for a few minutes to get attractive crusty potato topping
