Substitute veggie broth to make this vegetarian friendly! Vegetarian sausage with pearl couscous, zucchini, and red onion.

Recipe Ingredients for Vegetarian Sausage & Couscous Soup

12 oz Gimme Lean Sausage Style
1.67 cup dry Couscous
4 cup Broth Chicken Reduced Sodium
3 cup, sliced Squash, Summer, Zucchini, Includes Skin
1 cup chopped Red Onion

Recipe Directions for Vegetarian Sausage & Couscous Soup

Cook couscous as directed. Chop zucchini and red onion. Pour broth into a large pot, add zucchini, cover and heat to a boil. While waiting for broth to boil, saute sausage and onions in a frying pan. When broth boils all all ingredients together and simmer for 10-15 minutes. Add ground pepper or other seasonings to taste.
