A spicy vegetarian burrito without the tortilla. To make less spicy, remove the habanero pepper.

Recipe Ingredients for Vegetarian Sans-Tortilla Burrito

1/4 cup bell pepper
2 tbsp onion, chopped
1/2 cup corn
1/2 cup refried beans
1 habanero pepper, minced
2 tbsp hot sauce
1 tbsp cilantro
1 oz guacamole
1/4 oz cheese

Recipe Directions for Vegetarian Sans-Tortilla Burrito

  1. Heat up refried beans (if using other beans, note that black beans have more calories).

  2. Chop bell pepper and onion.

  3. Mince cilantro and habanero (if using).

  4. Combine bell pepper, onion, corn, habanero and cilantro in bowl.

  5. Pour hot sauce over veggies. Combine well.

  6. In another bowl, place beans on the bottom. Sprinkle with cheese.

  7. Pour spicy veggie mixture over beans.

  8. Add guacamole as the final layer or a dollop in the middle.

  9. Enjoy!
