Recipe Ingredients for vegetarian rice salad without rice

1 lb portabella mushrooms
1 c cherry tomatoes, sliced
1/2 red onion, sliced
4 c baby spinach
4 c arugula
1/4 c cilantro
2 egg yolks
2 T rice vinegar
1 t salt
1 t sugar
2 T canola oil

Recipe Directions for vegetarian rice salad without rice

  1. Grill portabella mushrooms (add a little oil, balsamic vinegar, salt and pepper)

  2. make dressing - last 6 ingredients

  3. toss together salad ingredients with dressing

  4. top with uncle ben's veggie rice and sliced mushrooms
