Recipe Ingredients for Vegetarian Quiche

1.5 cup, chopped Onions
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 Serving Tomatoes
0.5 cup, chopped Squash, Summer, Zucchini, Includes Skin
0.5 cup, pieces or slices Mushrooms
2 tbsp Olive Oil
0.5 tsp Curry Powder
0.5 tsp Salt, Table
0.25 tsp Pepper, Black
0.25 tsp Cinnamon, Ground
5 large Egg, Whole
0.25 cup Milk, Lowfat, Fluid, 1% Milkfat
4 tbsp Parmesan, Shredded Cheese

Recipe Directions for Vegetarian Quiche

  1. Heat oven to 350 degrees F.

  2. In a skillet, saute the onion, green pepper, tomatoes, zucchini and mushrooms in olive oil. Add the curry powder, salt, pepper and cinnamon; mix well.

  3. In a bowl, beat eggs. Add the milk and cheese; mix well. Carefully pour over vegetables. Bake for 40-45 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.
