Recipe Ingredients for Vegetarian Pumpkin Chili

1 T of Extra Virgin Olive Oil
1 medium Yellow Onion, chopped
3 cloves Garlic, minced
3 Jalapeno Peppers, minced
1 t Sea Salt (Only if Low Sodium Vegetable Broth is used)
1 1/2 T Cumin
1/2 t Ground Cinnamon
2 t Ground Coriander
1 1/2 T Chili Powder
1 t Cayenne Pepper
1 t Crushed Red Pepper
1 1/2 T Cocoa Powder
3 T Packed Brown Sugar
793 4/5 g ( g) Crushed Tomatoes
15 oz of Diced Tomatoes
15 oz of Pumpkin Puree
15 oz of Garbanzo Beans
425 3/10 g Pinto Beans

Recipe Directions for Vegetarian Pumpkin Chili

  1. Drain & Rinse Beans.

  2. In Slow Cooke, add Olive Oil & Onion. Cook on High for 10 minutes

  3. Add Garlic & Jalapeno. Cook on High for 10 minutes.

  4. Add water and dry ingredients. Cook on High for 10 minutes.

  5. Add remaining ingredients. Let cook on High for 2 hours.

  6. Taste, make adjustments, Cook on Low for 6 hours.
