Recipe Ingredients for Vegetarian Pumpkin, Bean and Tofu Lasagne

100 g tofu, diced
420 g tin of light baked beans
200 g pumpkin, thinly sliced
25 g (1 packet) three cheese sauce
1 large tomato, diced
200 g zucchini, thinly sliced
1/2 cup onion, diced
50 g red capsicum, diced
1 tbsp oregano
1 clove of garlic

Recipe Directions for Vegetarian Pumpkin, Bean and Tofu Lasagne

  1. Pre-heat oven to 180ºC.

  2. Heat beans, tomato and tofu in a saucepan until simmering.

  3. Add herbs, garlic, onion and capsicum in a separate fry pan and stir fry gently with no oil until heated.

  4. Prepare cheese sauce as per directions on pack.

  5. In a greased lasagne dish, place a layer of pumpkin slices and cover with half of the bean and tofu mixture.

  6. Place a layer of zucchini on top and then cover with half the cheese sauce.

  7. Cover with remaining bean and tofu mixture and top with leftover cheese sauce.

  8. Bake in oven for 40 mins.
