A low-fat vegetarian potato soup.

Recipe Ingredients for Vegetarian Potato Soup

7 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
8.47 oz Soymilk Light Plain
4 fl oz Rice Dream Original Enriched
2 tbsp Butter
3 medium raw Onion Yellow
1 tbsp Parsley, Dried

Recipe Directions for Vegetarian Potato Soup

  1. Remove skin from potatoes and cut into pieces.

  2. Chop up onion into small pieces.

  3. Boil potato and onion (with a dash of salt) in water until potatoes are soft.

  4. Drain pot of water.

  5. Add milks, butter, and parsley.

  6. Blend some of the potatoes with a hand mixer to thicken the broth.
