A delicious curry, that's not only healthy but easy too make as well! Will serve 2 people, or one hungry person!

Recipe Ingredients for Vegetarian Potato & Lentil Curry

1 large (3" to 4-1/4" dia.) Potatoes, Boiled OR 8 baby potatoes
100 grams Lentils, Mature Seeds
1 serving Ground Cumin Spice
1 serving Tomatoes
1 tsp Spices Ground Coriander
6 clove Garlic
1 Half an Onion

Recipe Directions for Vegetarian Potato & Lentil Curry

  1. You will need one large pan with a lid and a frying pan.

  2. Pour some oil into a large pan, and fill it with about 1 cup of water.

  3. Chop, either one large potato into several smaller ones, or chop about 8 baby potatoes in half.

  4. Pour the potatoes into the pan, and set to boil on a high setting for approx. 30/40 minutes (this tends to vary each time, so you'll need to keep a close eye)

  5. Stir occasionaly.

  6. After around 5 minutes, pour 1 can of chopped tomatoes into the same pan as the potatoes and mix the lentils in.

  7. Whilst you're waiting, chop half an onion & 6 cloves of garlic finely.

  8. Pour the onion and garlic into the frying pan, along with some oil and fry until they begin to brown.

  9. When the potatoes are almost done, mix the onions and garlic in with the potatoes in the large pan.

  10. Serve when the potatoes are soft, sprinkle some spices and herbs on top et voila!
