Recipe Ingredients for vegetarian pot pie with mushroom gravy

3 cups carrots
3 cups green beans
2 cups peas
4 cups mushrooms (baby portabella)
2 tbsp cornstarch
1 cup onion
3 cups morning star chixn strips
2 pie crusts
4 tbsp cornstarch
4 cups water
2 cups onion
4 tablespoon soy sauce
1 tsp sage
1 tsp salt
1/4 tsp pepper

Recipe Directions for vegetarian pot pie with mushroom gravy

  1. Preheat oven 400'

  2. Grease large caserole pan

  3. Boil onion in 3 cups of water until tender.

  4. Add mushroom, salt, pepper, sage, and soy sauce and cook until mushrooms are done.

  5. Use a stick blender to puree or add to a reg. blender

  6. return to pot and add cornstarch to thicken as desired. You might like to disolve the corn starch in some water and add gradually to gravy mixture. When done set aside to cool for 15 minutes.

  7. Lightly cook the frozen bags of carrots, peas, green beans. Chop up the chixn strips and toss with veggies. Add half of the gravy mixture to veggies and mix.

  8. Roll both pie crusts out. Overlap crusts to match the length of caserole. Cut off where the overlap meets and press ends together. Use extra crust to decorate the top.

  9. Place the crust on top of the caserole and bake at 400' for about 35 minutes until the crust is lightly brown. Serve with gravy and mashed veggies/potatoes
