Large pasta shells with broccoli and nuts

Recipe Ingredients for Vegetarian Pasta Shells with Roasted Broccoli and Nuts

1 lb pasta shells
4 cups broccoli florets
1/3 cup chopped walnuts
1/4 cup sliced almonds
3 tbsp garlic
1/3 cup extra virgin olive oil
1/2 tsp table salt
1/4 tsp pepper
2 tbsp dried cranberries

Recipe Directions for Vegetarian Pasta Shells with Roasted Broccoli and Nuts

  1. Heat oven to 400 degrees.

  2. Cook pasta according to package directions.

  3. Reserve 3/4 cup of the cooking water.

  4. Drain pasta and return to pot.

  5. Line a rimmed baking sheet with foil.

  6. Toss broccoli, nuts garlic, olive oil, salt and pepper in bowl.

  7. Spread on baking sheet.

  8. Bake 18-20 minutes or until broccoli is desired tenderness.

  9. Toss broccoli and pasta mixture and cranberries with the butter and 1/2 cup of reserved water.

  10. Add more of the water if pasta seems dry.

  11. Sprinkle with parmesan cheese on your plate.

  12. Tip: Would also make a great side dish WITHOUT the pasta added. Simply the roasted broccoli, nuts and cranberries.
