Recipe Ingredients for Vegetarian Pasta

1 tbsp olive oil
7/10 lb eggplant
7/20 lb green pepper
1/2 lb sliced mushrooms
1 1/2 cups baby spinach
1 tbsp minced garlic
24 oz pasta sauce
3 cups whole wheat pasta

Recipe Directions for Vegetarian Pasta

  1. Fry vegetables in nonstick pan.

  2. Cook pasta according to package directions.

  3. Mix sauce with vegetables.

  4. Serve vegetables over pasta.
