Traditional Spanish dish with a vegetarian twist.

Recipe Ingredients for Vegetarian Paella

256 g artichoke hearts, quartered
1/4 cup olive oil
3 garlic cloves, crushed
1 large onion, chopped
400 grams vegetable stock
1 pinch saffron
2 cups brown rice
1 cup garbanzo beans
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 cup green peas
1 cup mushrooms, sliced
4 tablespoons lemon juice

Recipe Directions for Vegetarian Paella

  1. heat olive oil in lg skillet saute garlic and onion for 3 min

  2. add rice and saute for 3 additional min stirring occasionally

  3. add vegtable stock and saffron simmer for 20 min

  4. coat artichokes with lemon juice

  5. add remaining ingredients continue to cook until rice is tender.
