I was aiming for vegan, but the marmalade doesn't really count.

Recipe Ingredients for Vegetarian orange glazed tofu

1 clove garlic
1/2 block firm tofu
1/6 cup orange marmalade
1 tbsp olive oil
1 1/2 tbsp soy sauce
1/4 cup orange juice
1 tbsp rice vinegar
2 tbsp flour

Recipe Directions for Vegetarian orange glazed tofu

  1. Preparation:

  2. Sautee tofu and garlic in olive oil for 3-4 minutes, until tofu is just lightly browned.

  3. Stir in soy sauce, orange juice, rice vinegar, marmalade and ginger, whisking to combine and coat tofu.

  4. Heat for 3-4 minutes, then add cornstarch and water, stirring to combine. Bring to a boil and cook until sauce thickens.

  5. Serve over rice or another whole grain.
