Spinach, mushroom, onion, tomato and provolone cheese omelette

Recipe Ingredients for Vegetarian Omelette

4 eggs
10 ounces fresh spinach
1 large onion
1 large tomato
8 ounces mushrooms
2 tablespoons olive oil
1/4 cup milk
2 ounces provolone cheese

Recipe Directions for Vegetarian Omelette

  1. In heavy fry pan, saute onions in olive oil (can use less olive oil). When carmelized, add mushrooms, cover until steamed. Add spinach, cook down, remove cover and add tomatoes, saute until liquid reduced.

  2. Whip 2 eggs in bowl, add 1/8 cup milk and seasoning. Spray smaller round fry pan with cooking spray, heat and add eggs, use spatula on edges to allow uncooked egg to roll under and around edges until egg is set and bottom is browned. Place half of vegetable mixture on one side of egg, flip other end over, place on plate, layer provolone cheese on top. Repeat for second omelette.
