Vegetarian moussaka with romano beans.

Recipe Ingredients for Vegetarian Moussaka

500 g
800 g canned tomatoes
1 large eggplant
100 g mushrooms, sliced
50 g
1/2 purple onion
1 sweet red pepper
2 cloves garlic
4 eggs, lightly beaten

1/2 cup

Recipe Directions for Vegetarian Moussaka

  1. Grill eggplant.

  2. Brown onion and garlic. Add mushrooms. Add tomatoes, tomato paste, oregano. Cook for ~40 minutes.

  3. Rinse beans and place in bottom of dish. Add tomato mixture. Add eggplant.

  4. Beat eggs, yogurt, and 1 cup water together. Pour over dish.

  5. Sprinkle bread crumbs and parmesan over egg mixture. Bake for ~40-60 minutes, or until golden brown.
