Vegatarian version of classic Greek moussaka

Recipe Ingredients for Vegetarian moussaka

1 Eggplant, thinly sliced
3 zucchini, thinly sliced
2 potatoes, thinly sliced
1 onion, thinly sliced
1 clove garlic, chopped
1 tablespoon white vinegar
8 oz tomatoes, peeled, chopped
8 oz lentils (can)
1 teaspoon dried oregano
2 tablespoons chopped parsley
1 cup reduced fat feta cheese
1 1/2 tablespoons butter
2 tablespoons all purpose flour
1 1/4 cups skim milk
1 egg
1/4 cup Parmesan cheese

Recipe Directions for Vegetarian moussaka

  1. Par boil potatoes

  2. Saute eggplant, onion, garlic, zucchini in a frying pan

  3. Combine potatoes to the above with a can of peeled, chopped tomatoes and can of lentils (If can't find canned lentils you may sub white beans)

  4. Add 1 tbs of vinegar with oregano & parsley

  5. Stir and simmer for 10 minutes on low

  6. Add feta cheese

  7. Pour into a large baking dish and bake at 375 for 40 minutes

  8. In the meantime melt butter, add flour and milk and stir until thick. Add a pinch of nutmeg. Remove from flame and let sit for 10 minutes. Then add 1 egg, lightly beaten and Parmesan cheese. Pour over mixture and return to oven for additional 20 minutes
