Mix of beans and vegetables. Can be served with baked Tostitos and topped with cheddar cheese. A good meat alternate.

Recipe Ingredients for Vegetarian Mix

12 cups black beans
12 cups pinto beans
3 1/4 pounds corn, frozen
3 pounds onion, chopped
3 pounds celery, chopped
2 pounds green bell pepper, chopped
2 pounds red bell pepper, chopped
1 cup green chilies, diced
1 1/2 cup olive oil
3 cups cider vinegar
2 cups Sugar
2 tablespoons salt
2 tablespoons pepper

Recipe Directions for Vegetarian Mix

  1. Drain beans, dice: onions, red and green peppers, celery and green chilies and combine with beans and corn.

  2. Make dressing in separate container and then combine with ingredients.

  3. Let sit overnight and serve with baked Tostitos Scoops.

  4. Shredded Cheddar may be used as a garnish, not included in the calories.

  5. Serving size is 1/2 cup.
