hearty soup- great for any day! This is absolutely so yummy and healthy too!

Recipe Ingredients for Vegetarian Minnestrone Soup

2 tsp olive oil
3/4 cup onion (chopped)
3 cups water
2 cups zucchini (diced)
1 cup carrots (diced)
1 cup dark red kidney beans (drained)
14 1/2 oz diced tomatoes (undrained)
1 clove garlic (minced)
3/4 tsp basil (dried)
1/4 tsp salt
1/4 tsp oregano (dried)
1/4 cup elbow macaroni (or ditalini, wheels or shells uncooked)
4 tsp parmesan cheese

Recipe Directions for Vegetarian Minnestrone Soup

Heat oil in a large sauce pan over medium high heat. Add the onion and saute for 4 minutes or until lightly browned. Add water and next 10 ingredients. Bring to a boil, cover and reduce heat to medium low for 25 minutes. Add pasta, cover and cook for an additional 10 minutes. Ladle into bowel and top with cheese.
