Hearty vegetable soup, great reheated. This recipe makes a lot of soup! Cut in half for smaller batch.

Recipe Ingredients for Vegetarian Minestrone with tofu

1 onion, chopped
64 oz vegetable stock
3 cups celery, chopped
3 cups cremini mushrooms, chopped
1 1/2 cups red kidney beans
1 1/2 cups black beans
4 tbs garlic, minced
14 oz tofu, firm
3 zuccini, small
1 cup spinach, chopped
2 tomatos, chopped
28 oz diced tomatos, canned
0.66 oz oregano, fresh
0.66 oz basil, fresh
0.66 oz parsley, fresh
4 cups fusilli pasta

Recipe Directions for Vegetarian Minestrone with tofu

  1. Heat vegetable stock in large pot.

  2. Start with adding herbs and seasonings, like garlic, oregano, parsley, and basil and bayleaf.

  3. If you prefer the tofu a little bit browned, then brown the tofu in a pan, then add to the base, otherwise just add it.

  4. Let simmer as you chop up vegetables. Start with the veggies that will take longer to cook like the celery, zuccini and onion. Add them to the pot, then the mushrooms, and beans.

  5. Once the vegetables start to get tender, add tomatoes.

  6. Continue to season with the garlic basil, oregano, and parsley to your preference. The measurements I gave are estimates and you may want to change it to your taste.

  7. Once the soup gets to the taste you prefer, add the pasta and let it simmer until pasta is tender.
