Basic minestrone soup, without pasta.

Recipe Ingredients for Vegetarian Minestrone Soup

1.5 cup Beans, Kidney, Red, Mature Seeds, Canned
1.5 cup Beans, Great Northern, Mature Seeds
2 serving Vegetable bullion (Organic Gourmet - vegan, gluten free)
2 serving VIGO EXTRA VIRGIN OLIVE OIL
1 cup, chopped Onions
2 clove Garlic
1 cup, diced Celery
2 cup, chopped Squash, Summer, Zucchini, Includes Skin
2 cup, chopped Kale
2 serving Tomatoes, Crushed, Canned
0.5 cup Parsley
1 tsp, ground Basil, Dried
48 oz Water

Recipe Directions for Vegetarian Minestrone Soup

  1. Heat olive oil in heavy stock pot.

  2. Saute onion and celery until soft.

  3. Add remaining ingredients.

  4. Cook on medium heat for 30 to 40 minutes.
