Recipe Ingredients for Vegetarian Minestrone

1 cup Barley, Pearled, Cooked
43.5 oz Stewed Mexican Recipe with Jalapenos Garlic and Cumin Tomatoes
2 medium Green Zucchini
1 cup Yellow Squash
1 spear (about 5" long) Broccoli
18 cup Organic Vegetable Broth
0.5 medium raw Onion Yellow
4 cloves, raw Garlic
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 tsp, leaves Thyme, Dried
1 tablespoon Oregano
1 tablespoon Oregano
1 serving Premium Selection Italian Seasoning

Recipe Directions for Vegetarian Minestrone

  1. In a very large pot, fill with fresh water half full. Keep track of how many cups of water you are pouring in because for every cup, you need one bouillon cube. Place the barley in the water and begin heating up the water on medium-high heat. Start putting all the bouillon cubes in as well.

  2. While the barley is cooking in pot, begin to chop up the 1/2 onion, dice the garlic, cut zucchini and squash in the wheels.

  3. Also- this is the time to cook the chicken or buffalo as well if it is not veggie!

  4. Check the barely- it is ready when it is soft... start adding the veggies that take longest to cook to shortest... Start with zuchinni and squash, onions, garlic then broccoli and add the canned and fresh tomatoes last. (NOTE: I use about 1/2 the tomato juice from the can- adds more flavor)

  5. I usually just eye ball my spices (yes, I'm one of those types) and dump them in as I go.. I would recommend at least a tsp. of ea. to taste. (I always go crazy with the spike though)

  6. Make sure all veggies are cooked but not over-done! Taste the broth with spoon to make sure your spices are working...

  7. this soup always tastes best the second day!
