Recipe Ingredients for Vegetarian Mexican lasagne

1 1/2 cups chopped onion
3 cups diced zucchini
10 oz. diced tomatoes and green chilies
10 oz. corn
15 oz. black beans
10 oz. enchilada sauce
1/2 c. chopped cilantro
1 c. cheddar cheese
4 whole wheat tortillas
2 t. olive oil

Recipe Directions for Vegetarian Mexican lasagne

  1. Saute onions 5 minutes, add zucchini and saute another 5 minutes. Add tomatoes, corn, beans, and sauce and heat till simmer. Remove from heat and add cilantro.

  2. Spray 3 qt. casserole to prevent sticking.

  3. Layer 1 tortilla, 1.5 C. zucchini mixture, 1/4 c. cheese, repeat until all incredients are used.

  4. Bake 350 degrees, 25 minutes.
