Recipe Ingredients for Vegetarian "Meat"balls

16 ounce fat-free cottage cheese
1 egg
1/4 cup tomato paste (1/2 small can)
1 tablespoon dried basil
1 tablespoon dried oregano
1/4 cup parmesan cheese
1 ounce dry onion soup mix
1 cup almonds, finely chopped
4 cups corn flakes
1/4 cup diced onion
3 garlic cloves, minced

Recipe Directions for Vegetarian "Meat"balls

  1. Drain the cottage cheese in a cloth or coffee filter lined strainer.

  2. Preheat oven to 350 degrees F (175 degrees C).

  3. Grease a cookie sheet, or cover with parchment paper.

  4. In a large bowl, combine all ingredients.

  5. Form into 33 balls, 1 heaping Tbsp each.

  6. Bake for 30 Minutes.

  7. I freeze these after they are cooked, then if I want to use them for "ground beef", I thaw and crumble them into the recipe.
