Recipe Ingredients for Vegetarian Marinara Sauce

3 tbsp olive oil
3 large tomatoes
70 oz. canned diced tomato
30 oz. tomato sauce
6 oz. tomato paste
3 cups spinach
1 cup mushrooms
1 red pepper
1 onion
3 cloves garlic
4 carrots

Recipe Directions for Vegetarian Marinara Sauce

Heat pot over medium, add olive oil, add chopped onion and garlic and sweat. Add mushrooms, peppers, and carrots until soft, add canned tomatoes, fresh tomatoes, stir. Add tomato sauce and paste (as necessary). Bring to a boil. Taste. Add spices as desired. Let cook for another 30 or so minutes. Serve over pasta of choice. Add meat (ground beef, sausage, chicken, whatever) as desired. Sprinkle with parmesan or romano or similar cheese as desired.
