A great, hearty casserole that tastes great with a tomato salad.

Recipe Ingredients for Vegetarian macaroni pudding

1 1/2 cups elbow macaroni, uncooked
2 carrots, grated
1 cup parsnip, grated
1 leek, sliced
3 cloves of garlic
2 tablespoons olive oil
250 grams frozen spinach
1 1/2 teaspoons salt
1 pepper
1 1/2 cups milk
1 cup grated cheese
3 eggs

Recipe Directions for Vegetarian macaroni pudding

  1. Turn oven on to 375. Boil macaroni al dente and drain. Peel the root fruits and grate them. Rinse and slice leek. Thaw spinach.

  2. Saute garlic, root fruits, leeks and spinach i olive oil.

  3. Mix the vegetable fry and cooked macaroni in a large bowl. Whisk the milk, cheese and egg and mix with other ingredients. Pour over into a casserole. Bake for 30-40 minutes.
