Recipe Ingredients for Vegetarian Loaf

1/4 cup sunflower seeds
1/4 cup pumpkin seeds
2 tbsp olive oil
1 onion, diced
1 tsp garlic minced
1 large carrot
2 celery stalks
1 cup lentils, cooked
1 cup pinto beans, cooked
1 cup quinoa, cooked
1/4 cup almond milk
1 cup oatmeal, cooked
1/4 cup minced fresh parsley
2 tbsp. ketchup
1 tsp worcestershire sauce
1 tsp salt

Recipe Directions for Vegetarian Loaf

  1. preheat oven to 350. spray loaf pan with nonstick spray

  2. grind the seeds into a coarse meal with the food processor

  3. saute vegetables with olive oil

  4. mash everything together (use food processor to make the mixture less chunky)

  5. press mixture into the pan and bake 45 min. to 1 hour
