Recipe Ingredients for Vegetarian light vegetable soup

1 medium onion, chopped
1 stalk celery, cut lengthwise
1 medium green pepper, chopped
4 c. water
2 bullion servings (4 chicken bullion cubes)
7 medium tomatoes, diced
1/4 tsp salt
1/8 tsp pepper
1/4 tsp basil
1/4 tsp dried oregano
1/4 tsp garlic powder

Recipe Directions for Vegetarian light vegetable soup

  1. First, simmer the onion, celery, and green pepper in shallow water in a large pan, until veggies are tender.

  2. Add all the other ingredients and simmer until softened.

  3. Seasonings are optional. Add to taste.

  4. Serves six, each serving approximately 2 cups.
