1 lb protein crumbles
1 large onion , chopped
1 stalk celery , chopped
2 large carrots , chopped
1 small zucchini , chopped
6 cups vegetable broth
29 ounce diced tomatoes , undrained
2 garlic cloves
1 teaspoon salt
2 cups dry lentils
1 black pepper
1 red (2 g) pepper flakes (tsp)
1 tsp dried basil
1 tsp dried oregano
1 tsp dried parsley
1 tsp dried thyme

Recipe Directions for Vegetarian Lentil Soup

since the protein crumbles are already cooked, put everything into a pot, bring to a boil, reduce to a simmer, and cook for 45 minutes or so until the lentils are al dente.
