No fat. No meat. Season with sage, thyme, bay leaf and cumin.

Recipe Ingredients for vegetarian lentil soup

1 large Onions
2 carrot (7-1/2") Carrots
4 stalk, medium (7-1/2" - 8" long) Celery
4 clove Garlic
32 fl oz Organic Low Sodium Chicken Broth
128 grams Lentils
405 grams Yukon Gold Potatoes

Recipe Directions for vegetarian lentil soup

  1. Sautee uniformly diced veggies (except potatoes) in Pam

  2. Add broth, let carrots cook about 10 minutes

  3. Add lentils and potatoes and cook about 20-30 minutes more

  4. Serve.

  5. I used the small gold Yukon potatoes and the package said that 5 potatoes = a serving, so after cooking the soup, I split it into 3 servings, each with 5 little potatoes. Very good, I served this over an HMR 5 bean casserole entree and it was a good combination.
