Recipe Ingredients for Vegetarian Lentil Soup

1 tablespoons olive oil
2 large onions
1 tablespoon minced garlic
2 cups lentils
1/2 teaspoon ground black pepper
96 oz vegetable stock (6 cups)
1/2 teaspoon paprika
1 Salt and pepper to taste

Recipe Directions for Vegetarian Lentil Soup

  1. Saute diced onions for 10 minutes or until clear

  2. Add paprika and garlic and continue to cook for 5 more minutes.

  3. Add lentils and chicken stock.

  4. Bring to a boil.

  5. Reduce heat and simmer for an hour or until lentils are cooked.

  6. Do not add salt until after the lentils are cooked completely or the lentils will be tough
