Yummy vegetarian Italian style lentil soup!

Recipe Ingredients for Vegetarian Lentil Soup

16 oz. dried lentils
32 oz canned tomatoes
48 oz vegetable broth
3 onions
4 carrots
2 T olive oil
4 stalks celery
16 oz. canned spinach
2 T garlic
16 oz. smart ground

Recipe Directions for Vegetarian Lentil Soup

  1. Put the dried lentils, canned tomatoes, canned spinach, and vegetable broth in the crock pot with 2 T fennel, 2 T basil, salt and pepper.

  2. Finely chop the carrots, celery, and onions. Saute in a frying pan with the olive oil. When the onions are becoming translucent place the smart ground in the pan and continue to fry.

  3. Place in crock pot and cook everything until the lentils are soft.
