Recipe Ingredients for Vegetarian Lentil Meatloaf

1 1/2 cups lentils
3/4 cup onion, chopped
1/2 cup carrots, chopped
1/2 cup red pepper, chopped
1/4 cup wheat germ
1/2 cup cooked brown basmati rice
3/4 cup quick oats
1/4 cup Flax Seed
2/3 cup egg whites
6 1/2 oz tomato sauce
1 tbsp extra virgin olive oil
2 tsp thyme

Recipe Directions for Vegetarian Lentil Meatloaf

  1. In large saucepan, add lentils and fill with enough water to cover by one inch. Bring to a boil, and cook for about 45 minutes, checking occasionally and adding more water as needed.

  2. Preheat oven to 375. Lightly grease 8x4 loaf pan

  3. In a food processor, combine onion, carrot, red pepper and wheat germ. Pulse until finely chopped. Transfer to a bowl. Put lentils in food processor. Process until pasty consistency. Add lentils to bowl with vegetables. Add all remaining ingredients and mix well. Spoon mixture into prepared loaf pan.

  4. Bake for 45 minutes, until heated through and browned on top
