Spicy, smoky chili with lentils, beans, and portabella mushrooms.

Recipe Ingredients for Vegetarian Lentil Chili

1 cup Yellow Split Peas, dry
3/4 cup Red Lentils, dry
41 oz Kidney Beans
42 oz Diced Tomatoes
8 oz Tomato Sauce
8 oz Chipotles in Adobo Sauce
1 bottle of Dark Beer (Stout or Lager)
6 oz Chopped Green Chilis
2 medium Onions, Diced
2 tsp Garlic, finely diced
3 tbsp Vegetable Oil
16 oz Chicken Stock
6 oz of Portabella Mushrooms, chopped
1 tsp Salt
1/2 tsp Black Pepper
1/4 tsp Cayenne Pepper
2 tsp Chili Powder
1 tsp Cumin, ground
2 tsp Ketchup
1 tsp Worcestershire Sauce
2 tsp Dark Brown Sugar

Recipe Directions for Vegetarian Lentil Chili

  1. Wash the lentils and peas (separately--they need to be kept apart for now) with water until it runs clear. Scan them for any rocks or other debris.

  2. Bring the can of chicken stock to a boil in a medium pot. Add the yellow split peas and stir lightly. Wait 2 minutes and add the red lentils and continue to boil, stirring rarely, for 10 more minutes. Remove from heat and drain.

  3. Heat the oil in a large Dutch Oven and add the onions and garlic once it's hot. Stir frequently until the onions turn translucent and become soft. Add the salt, black pepper, cayenne, chili powder, and cumin. Stir.

  4. Blend together the beer, chipotles and adobo sauce, green chilis, ketchup, worcestshire sauce, and brown sugar. Add it to the onion and spice mixture in the Dutch oven and stir until fragrant and sizzling.

  5. Add the diced tomatoes and tomato sauce and bring to a boil. Lower the heat and simmer, stirring occasionally, until the mixture turns dark and fragrant (30-60 minutes). Add the beans and continue to simmer and stir for another half hour. Add the mushrooms and cook for another 15 minutes. Finally, add the cooked, drained lentils/peas and cook for another 15-20 minutes until the lentils are done, but not yet "mushy" and "grainy." They should have a slight bite to them, but not be unpleasantly hard.

  6. Microwave to re-warm?if you overcook the pot, the lentils will get mushy.
