Recipe Ingredients for Vegetarian Lasagne Rolls

16 ounces lasagne pasta
1 1/2 tbsp extra virgin olive oil
2/3 cup red bell pepper, chopped
2/3 cup green pepper, chopped
1/2 cup onion, chipped
2/3 cup mushrooms, chopped
2 cups ricotta cheese, low fat
10 ounces spinach, thawed and chopped
1/2 cup egg beaters
6 tbsp parmesan cheese, grated
1 tsp black pepper
30 ounces tomato sauce
2 tsp marjoram
1 tsp sugar
1/2 tsp garlic powder
2 1/2 ounces mozzerella cheese, shredded

Recipe Directions for Vegetarian Lasagne Rolls

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Bring a large pot of water to a boil. Add lasagna pasta and cook for 8 to 10 minutes or until al dente; drain and pat dry. Lay flat on wax paper.

  3. In a large skillet saute in oil the red and green peppers, mushrooms and onion until tender. In a bowl combine the sauteed vegetable mixture, ricotta cheese, spinach, eggs, 4 tablespoons of the Parmesan cheese and pepper; mix well.

  4. In a large skillet, heat tomato sauce, marjoram, sugar and garlic powder for 5 minutes.

  5. Spread 1/3 cup filling on each noodle. Roll up and place in greased 9x13 baking dish. Pour tomato sauce mixture over lasagna rolls. Sprinkle with mozzarella cheese and remaining Parmesan cheese. Cover and bake in a preheated oven for 40 minutes.
