Recipe Ingredients for Vegetarian Lasagne Roll-ups

16 ounces lasagna noodles
1 1/2 tbsp extra virgin olive oil
2/3 cup red bell pepper, chopped
2/3 cup green pepper, chopped
2/3 cup mushrooms, chopped
1 zucchini, chopped
1/2 cup onion, chopped
2 cups ricotta cheese
10 ounces frozen spinach, thawed and chopped
1/2 cup egg beaters
6 tbsp parmesan cheese, grated
1 tsp black pepper
30 ounces tomato sauce
1 tsp white sugar
1/2 tsp garlic powder
2 ounces mozzerella cheese

Recipe Directions for Vegetarian Lasagne Roll-ups

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Bring a large pot of water to a boil. Add lasagna pasta and cook for 8 to 10 minutes or until al dente; drain and pat dry. Lay flat on wax paper.

  3. In a large skillet saute in oil the red and green bell peppers, mushrooms, zucchini and onion until tender. In a bowl combine the sauteed vegetable mixture, ricotta cheese, spinach, egg substitute, 4 tablespoons of the Parmesan cheese and pepper; mix well.

  4. In a large skillet, heat tomato sauce, sugar and garlic powder for 5 minutes.

  5. Spread 1/3 cup filling on each lasagne noodle. Roll up and place in 9x13 baking dish (either greased or sprayed with nonstick cooking spray). Pour tomato sauce mixture over lasagna rolls. Sprinkle with mozzarella cheese and remaining Parmesan cheese. Cover and bake in a preheated oven for 40 minutes.
