Recipe Ingredients for Vegetarian Lasagne

500 grams Squash, Summer, Zucchini, Includes Skin
250 grams Mushrooms
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 eggplant, peeled (yield from 1-1/4 lb) Eggplant
400 grams Tomatoes Diced No Salt Added
400 grams Tomatoes Diced No Salt Added
125 grams Lasagna
250 grams Creamed Spinach
30 grams Wheat Flour, White, All-purpose, Enriched, Bleached
30 grams Butter
1.5 cup Milk, Reduced Fat, Fluid, 2% Milkfat

Recipe Directions for Vegetarian Lasagne

  1. Simmer veg (except spinach) in canned tomatoes (I use tomato and onion mix) with a stock cube and herbs of your choice until tender and tasty

  2. Melt butter in microwave

  3. Add flour to butter plus half tsp salt

  4. Add milk a little at a time, whisking to keep the roux smooth

  5. Once all milk has been added, microwave for 8 minutes, stirring every minute or two, until thick

  6. Add creamed spinach to white sauce.

  7. Layer lasagne sheets and veg mix

  8. Top with spinach white sauce

  9. Bake for ~30 minutes or until done
