Vegetarian lasagne with cottage cheese and spinach

Recipe Ingredients for Vegetarian Lasagne

Spinach
4 oz Cottage Cheese, Lowfat, 1% Milkfat
1 tbsp chopped Onions
60 grams Lasagna
0.5 cup Milk, Reduced Fat, Fluid, 2% Milkfat
0.1 cup Wheat Flour, White, All-purpose, Enriched, Bleached
0.4 cup, shredded Cheddar Cheese
0.3 cup, pieces or slices Mushrooms
1/4 Jar Passata Italian Sauce

Recipe Directions for Vegetarian Lasagne

  1. Chop onions and cook on low heat until caramelised.

  2. Add mushrooms and soften.

  3. Add passata and wine if desired. Allow to simmer until sauce is thick.

  4. Mix cottage cheese and spinach in mixing bowl.

  5. Make white sauce.

  6. With lasagne sheets, start with a layer of tomato, then a layer of the spinach mixture, etc.

  7. Add white sauce and top with cheese. Cook until golden brown.
