Using Morningstar Italian Sausage & Tofu Ricotta

Recipe Ingredients for Vegetarian Lasagna

9 oz Vegetarian Sausage
24 ounces Ragu sauce
10 oz lasagna noodles
14 oz tofu, extra firm
2 T garlic
1 T oregano
14 oz tomatoes, diced
16 ounces mozzarella cheese, shredded
2 T Olive Oil

Recipe Directions for Vegetarian Lasagna

  1. Microwave "Italian Sausages" and mix with Ragu sauce and diced tomatoes. Tastes and works best if you let this simmer for several hours so that it will "cook down."

  2. In a food processor, mix package of tofu, Olive oil, garlic, and oregano.

  3. Layer cooked lasagna noodles, then sauce, then "ricotta," then cheese, and repeat.

  4. Finish with a layer of cheese. Cover with foil and bake at 350 degrees for 20-30 minutes. Take off foil and broil for 3-5 minutes to brown cheese on the top.

  5. Allow to "set" for about 20 minutes and serve. Remember, lasagna always tastes best and works best the next day for leftovers. ENJOY!!
