Using low fat ricotta cheese reduced the calories per serving by about 25. No need to cook the pasta ahead of time, though you can if you want to.

Recipe Ingredients for Vegetarian Lasagna

9 oz lasagna noodles (9 noodles)
3/4 c pasta sauce
3/4 c ricotta cheese (low fat)
1 red bell pepper, sliced
3 c baby spinach, whole washed
1/2 c mushrooms
1/4 c onion, chopped
12 asparagus spears
1/2 part skim mozzarella

Recipe Directions for Vegetarian Lasagna

  1. Place 3 uncooked noodles on bottom of a square baking pan. You will probably have to break them to make them fit, just overlap the extra bits.

  2. Cover each noodle with sauce (use 1/4 C).

  3. Use 1/4 of the ricotta.

  4. Chop 6 asparagus and sprinkle over cheese.

  5. Add 1/2 of the red pepper.

  6. Next layer of noodles, another 1/4 C sauce and remaining ricotta.

  7. Add spinach and mushrooms.

  8. Final layer is noodles, sauce, onions, remaining asparagus and pepper and top with ricotta.

  9. Bake for 40-60 minutes at 375 degrees. Check cheese part way, if too brown, cover with aluminum foil. This recipe easily doubles.
