Vegetarian Lasagna Recipe

A delicious vegetarian lasagna, that doesn't taste bland! We are not vegetarians, but when I made this for our friends who are they said it was one of the best they've had! It takes a little extra work (like most lasagnas) but it is one of our favorites, even for my husband who is a strict carnivore!

Recipe Ingredients for Vegetarian Lasagna

1 lb Monterey Jack cheese, grated
8 oz whole wheat lasagna noodles, cooked
2 packages frozen chopped spinach, cooked and drained
1 yellow squash, sliced thin
1 zucchini, sliced thin
1 red pepper, sliced thin
1 cup grated Parmesan cheese
2 lbs non-fat cottage cheese
2 eggs, beaten
1 tbsp parsley

Recipe Directions for Vegetarian Lasagna

  1. Grease 9x13 pan. Preheat oven to 350F.

  2. Cook noodles (total of 12 lasagna noodles), drain spinach.

  3. Slice veggies very thinly (I use a Mandolin slicer). Then pat dry with a paper towel. The drier you can get them, the less "juice" you should have at the bottom of your lasagna.

  4. Mix cottage cheese, seasonings (including salt, pepper and garlic to taste), eggs, and butter.

  5. Place in layers in the following order: noodles (3 per layer), cheese mixture, jack cheese, veggies, Parmesan. Repeat two more times. I often end up using a little different mix of veggies for each layer and run out of some by the top layers. Don't worry about it. Just try to spread them in an even layer.

  6. Do one last layer (4th layer) in this order (to keep the top of the lasagna moist): noodles, cheese mixture, any remaining veggies, jack cheese, Parmesan.

  7. Bake at 350F for 30 minutes, uncovered. Or store in the fridge until you would like to cook it. If storing in the fridge, increase cook time to 60 minutes or until cheese is bubbling and veggies are tender.
