Vegetarian Lasagna, No Noodles Recipe

Strips of thinly sliced eggplant replace the lasagna noodles in this recipe.

Recipe Ingredients for Vegetarian lasagna, no noodles

1 tbsp. chopped onion
1 clove garlic, minced
1 tsp. olive oil
1 1/2 c. tomato, peeled and diced
1/2 c. chopped green pepper
1 small zucchini, diced
1/4 lb. fresh mushrooms, chopped
1 tsp. oregano, dried whole
1/4 tsp. salt
1/4 tsp. pepper
2 eggs, beaten
1 c. low-fat ricotta cheese
1 tbsp. chopped fresh parsley
1/2 c. (2 oz.) shredded Mozzarella cheese
1 tbsp. grated Parmesan cheese
2 cups tvp, reconstituted
2 large eggplant, peeled and sliced lengthwise (these will replace the lasagna noodles so keep it very thin)

Recipe Directions for Vegetarian lasagna, no noodles

  1. Reconstitute TVP.

  2. Saute onion and garlic in hot oil in a large skillet 2 minutes. Stir n next 8 ingredients; cover, reduce heat and simmer 10 minutes. Add TVP; set mixture aside.

  3. Peel eggplant and slice thinly lengthwise. Cut in half lengthwise again and roast in a 350 degree oven.

  4. Combine eggs, cottage cheese and parsley; set aside.

  5. Coat an 8 inch square baking dish with cooking spray. Spoon a little tomato sauce into the bottom of the dish and layer eggplant on top.

  6. Spoon half of cottage cheese mixture over noodles.

  7. Spread half of vegetable mixture over cottage cheese mixture; sprinkle with half of Mozzarella.

  8. Repeat layers, ending with eggplant.

  9. Cover and bake at 350 degrees for 20 minutes. Sprinkle with Parmesan; cover and bake 5 minutes.
