Transylvanian rice and sauerkraut casserole, made with vegetarian meat substitute.

Recipe Ingredients for Vegetarian Kolozsvari Kapuszta

2 1/2 cups cooked rice
1 medium onion, diced
2 cloves garlic, minced
28 oz diced tomatoes
2 cups sauerkraut, drained
1/2 cup sour cream
1 tbsp butter
340 g veggie ground round
1/2 tsp pepper
1 tbsp paprika
1 tsp bouillon, vegetable

Recipe Directions for Vegetarian Kolozsvari Kapuszta

  1. Preheat oven to 350 F. Grease a 2.5 or 3 quart casserole dish with 1 tsp butter.

  2. Saute onions and garlic in remaining butter. Add veggie ground round and saute until hot. Add pepper, paprika and bouillon. (I use "Better than Bouillon" vegetarian paste.)

  3. Drain the tomatoes; discard all but 1/2 cup of the juice. Add remaining tomato juice to veggie ground round mixture.

  4. Drain sauerkraut, squeezing out most of the juice. Discard juice.

  5. Layer ingredients in casserole dish as follows: sauerkraut, rice, "meat" mixture, tomatoes; repeat. Spread 1/2 cup sour cream over top.

  6. Cover and bake one hour or until hot and bubbly.
