Great on Festive Lentil and Nut Roast

Recipe Ingredients for Vegetarian Gravy

1 large red onion, sliced
3 turnips, cliced
3 celery stalks, sliced
4 oz mushroom caps, halved
2 cloves garlic
6 tbsp sunflower oil
6 cups stock, vegetable (or water)
3 tbsp soy sauce
1/2 tsp sugar
1 salt and pepper to taste

Recipe Directions for Vegetarian Gravy

  1. Cook the vegetables and garlic on a moderately high heat with the oil in a large saucepan, stirring occasionally until nicely browned but not singed. This should take about 15 - 20 minutes.

  2. Add the stock or water and soy sauce, bring to a boil and cover and simmer for about 20 minutes.

  3. Puree the vegetables adding a little stock and return to the pan by rubbing the pulp through a sieve with the back of a ladle or wooden spoon.

  4. Taste for seasoning and add the sugar. Freeze at least halve of the gravy to use later and reheat the rest to serve with the rice and peas or lentil nut roast.
