Vegetarian Goulash Recipe

Not a traditional goulash at all, but tasty! The recipe was adapted from one I found on Allrecipes.com, and it's great served with rice.

Recipe Ingredients for Vegetarian Goulash

340 g veggie ground round
2 T olive oil
8 ounces mushrooms, sliced
100 g green bell pepper, sliced in 1/2" pieces
400 g red bell peppers, sliced in 1/2" pieces
200 g zucchini, sliced
1/2 (60g) yellow onion, chopped
1/2 T paprika
1/2 T dried basil
1 t garlic powder
1/2 t salt
1/2 t white pepper
14 1/2 ounces canned diced tomatoes

Recipe Directions for Vegetarian Goulash

  1. In a skillet or wok, heat the veggie ground round, then set aside.

  2. Heat olive oil in the pan. Add the remaining ingredients except the tomatoes. Cook for 5 minutes, stirring often.

  3. Reduce heat and add veggie ground round and tomatoes. Simmer for about 20 minutes.
