Recipe Ingredients for Vegetarian Fajitas

3/4 cup Beans, Pinto, Mature Seeds, Canned
0.66 cup, chopped Peppers, Sweet, Red
0.33 medium (2-1/2" dia) Onions
3/4 cup, chopped Squash, Summer, Zucchini, Includes Skin
0.33 cup Sauce, Ready-to-serve, Salsa
1/4 tsp Cumin
1/2 tsp Chili Powder
2 clove Garlic

Recipe Directions for Vegetarian Fajitas

Juienne peppers, onion, and zucchini. In a medium to large skillet with a tight fitting lid, heat oil, add the vegetables, saute 3 - 4 minutes or till tender crisp. Add spices and beans, mix well, cook for another 3 - 4 minutes. Add salsa, mix thouroughly and cook for another minuted. Place tortilla on top of mixture, cover with lid and let sit for a minute or two. Remove tortilla to plate, add vegetable mixture, top with cheese and wrap. You can pop into a microwaver for 15 - 20 seconds to melt cheese if needed. Check fajita after 10 minutes as all microwaves vary in power.
