A yummy, high-protein version of fajitas!

Recipe Ingredients for Vegetarian Fajitas

1/3 cup textured vegetable protein
3 cloves garlic
2 green bell peppers
4 large mushrooms
1/2 large onion
8 oz 5 grain tempeh
1 tsp curry
1 tbsp cumin
1 tsp cayenne
1 tbso garlic powder
1 tbsp onion powder
1/2 tsp poultry seasoning
1/4 cup cilantro, chopped
1/2 cup black soybean
2 tbsp lime juice

Recipe Directions for Vegetarian Fajitas

  1. Place the TVP in a small bowl with 1/3 cup water.

  2. Spray pan with no-calorie spray oil lightly.

  3. Chop onions, peppers, and mushrooms in thin strips and add to pan.

  4. Dice garlic and add to veggies.

  5. Add TVP and crumble tempeh into pan.

  6. Add all spices to taste. (My amounts are suggestions, not exactly what I added.)

  7. Cook on medium or medium high until cooked down, stirring frequently. I added approx. 1/2 cup water to assist with cooking down and allowing the flavors to mingle.

  8. When almost done (water cooked out, veggies cooked down, hot temperature, etc), add chopped cilantro and lime juice from half a lime.

  9. I served with a small amount of reduced fat cheese, fresh lime, fresh cilantro, fat free sour cream, salsa, corn, and tortillas. It was quite a feast!
